Hygiene aspects of food stall
1. Personal hygiene
Good aspects;
- The person cooking was wearing a mask and a cap. It prevents foreign matter like bodily fluids (saliva) or hair from dropping into the food. [seen in interior 1]
- There is a basin provided in the store so the workers could wash their hands. This reduces the amount of germs accumulated on his hands. [interior 3, the man wearing black shirt is standing at the basin.]
-Boxes of gloves are provided in the store, it would be worn when the person handling food preparation . [interior 3, on the trolley's second level.]
Bad practices;
- The person cooking was not wearing an apron. It would have been able to prevent food stains or bacteria from collecting on his clothes, or prevent bacteria on his clothes, which may have came from outside the store, getting into the food. [seen in interior 1 and 3]
2. Food hygiene
Good practices;
- tongs were provided next to the raw food ingredients [interior 1 and 3]
- ingredients are kept in containers with lids to prevent pests like flies from coming in contact with food. [interior 1 and 3]
Bad practices;
- Some of the lids on food containers were not closed properly. Foreign objects may accidentally drop into the container. [interior 3]
3. Environment hygiene
Good aspects;
- The trays, bowls used for serving are clean and stacked neatly. [interior 2]
- Receipts are kept in a container and not cluttered over the desk. [interior 2]
Bad aspects;
- the fridge door is dirty with water stains. [interior 1]
- plastic bags are stacked under a pot on the trolley and not kept neatly. [interior 1]
Suggestions for Improvement
1. Enforce attire for workers. ensure they wear long pants and covered shoes.
2. Keep unused containers/plastic bags in cupboard.
3. Wear hair nets.
